Seafood Mac and Cheese

I don't have a picture of this, but I promise, it is delicious!!


Ingredients 
  • 2 cups Velveeta Cheese
  • 1/2 cup Milk
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. paprika
  • 1/2 cup chopped red and green peppers
  • Any Seafood Desired (I used 1 small can of crabmeat (from the Tuna aisle), 2 steamed tilapia fillets, and 1 packet of precooked salad shrimp)
  • 1 box medium pasta shells
  • Italian bread crumbs
  • 4 tbsp Butter

Directions
  1. Combine the cheese, milk, cayenne pepper, paprika, red and green peppers and seafood together in a saucepan on medium heat.  Stir often to keep the cheese from burning.
  2. Boil pasta according to the package directions, and drain.
  3. Combine pasta and cheese sauce together, and pour into a greased square casserole dish. (you can butter the dish or just use cooking spray).
  4. Sprinkle bread crumbs to cover the top.
  5. Cut the butter into small slices and evenly place over the top.
  6. Bake for 30-35 minutes, until the bread crumbs are crispy and golden brown.
My review:  This is delicious and oh so rich and satifying.  All I did was make my seafood cheese fondue recipe and added pasta and breadcrumbs.  Delicious!!

Crab Melt



6 oz can Crab Meat, drained
1/2 cup Grated Sharp Cheddar Cheese
1 stalk celery, diced
1/2 small onion, diced
2 tbsp Light Mayonnaise
2 tbsp Melted Butter or Margarine
1/2 tsp Old Bay seasoning
1 dash Garlic Salt
Pepper to taste
4 English Muffins (try the 100 calorie ones -- they are delicious!)



Preheat oven to 350 degrees.
Split the English Muffins.
Mix the crab meat, cheese, celery, onion, mayonnaise, butter, and garlic salt together in a small bowl.
Spread about 1 tablespoon of mixture onto each muffin.
Bake for 20 minutes, then place under the broiler for 3 minutes.

These can also be prepared and frozen before baking.  Do not top with shredded cheese and freeze, separating layers with wax paper or parchment paper.  Bake for 30 minutes.
 

My review:  This was absolutely scrumptious.  I had something like this in a restaurant once and decided to try my hand at making my own.  I think it would make a good appetizer for parties, too, if you would cut in quarters.  I made this full recipe, and froze the rest to use for quick dinners later.

Shrimp Quesadillas that would make Bubba proud...


I adapted this recipe a little bit from Pioneer Woman.  I prefer my peppers and onions diced up into small pieces, and to keep my shrimp whole.  But mostly, this recipe came from P-Dub, and it's delicious!

  1 lb. Shrimp (36 count), tailed and deveined
6 tortillas (burrito size)
2 cups Shredded Colby Jack Cheese
1 onion, diced
1 red pepper, diced
1 green pepper, diced
1 (8oz) bottle mexican red sauce (taco sauce)
Olive Oil
Cooking Spray
Sour Cream and Salsa for dipping

Pour sauce over shrimp and put aside.
Saute onions and peppers in olive oil on high heat until browned.  Remove from skillet.
Keeping your skillet on high heat, pour the shrimp and sauce into the skillet.  Don't stir often, cooking until the shrimp are opaque.  (you can remove the shrimp here and chop into pieces if you like, otherwise, just turn off the heat, and leave them in the pan.)
Spray another skillet with cooking spray, and heat to medium heat.  place a tortilla in the skillet, layer ingredients on one side, cheese, shrimp, veggies, cheese, and then fold over.  Cook on both sides.
Slice into wedges and serve.
I like to have mine with rice and beans, and dip them in sour cream and salsa.


My review:  I would make this again.  I loved it.  One of those things like fish tacos that you don't think you'll like, but when you try it, it's like hmm, not bad.  It was nice to try something different.  I love seafood, but don't eat it very often.  This was a nice change.

Old Bay Shrimp Scampi



I saw this recipe on the back of the Old Bay can, and I knew that I just HAD to make it. Oh yeah, and those are boiled monkey heads next to the pasta in the picture. Otherwise known to normal people as brussels sprouts...

1/3 cup oil (i used 1/2 vegetable and 1/2 olive)
1 lb. shrimp, peeled and tails off
2 tsp Old Bay
1 tsp Parsley Flakes
1 tbsp Lemon Juice

Heat the Oil in a large skillet. Add garlic and saute for 1 minute.
Add shrimp, Old Bay, and parsley.
Saute for 3-5 minutes or until the shrimp turn pink. Stir in Lemon Juice.

Serve over angel hair pasta. Top with Parmesan and a bit of mozzerella cheese.


My review: This was incredibly easy. and very yummy. I highly recommend this recipe. You can adjust the Old Bay to your preferred spiciness. The original recipe called for 1 1/2 tsp, and I added a bit more. Enjoy!

Seafood Fondue

2 cups Velveeta Cheese
1/2 cup Milk (preferably Whole Milk)
1/2 tsp. cayenne pepper
1/2 tsp. paprika
1/2 cup chopped red and green peppers
Lobster, Crab, and Shrimp as desired (can used canned, fresh, or frozen)


Combine all ingredients in a saucepan and heat on low until melted.
Serve in a toasted bread bowl (I prefer a sourdough bread bowl). Cut into a bowl and use the rest for dipped. Put in under the oven broiler to toast with some olive oil. You can also serve in a fondue pot or crock pot. Use toasted bread, crackers, pretzels, veggies, or tortilla chips to dip.


My review: Tastes just like the lobster fondue from Red Lobster. We usually make this to use leftover seafood, like after our New Year's Seafood feast. It's delicious, a hit at parties, and EASY! (to make and enjoy...)
